So, I'm off work today, so I decided to play around with six beautiful large mushrooms I had. Took out the stems, placed some cheese in the hole, and baked them for about 7 minutes on 350. Meanwhile, I mixed up 1/2 ripe avocado with a pouch of Starkist chicken (lemon pepper) and some pumpkin seeds. When they cooled a bit, I filled them with the mixture and topped them with a sprinkle of chia seeds. Sliced some black olives on top. Lunch for 3 days!
