Hi Leah Anne I made it up as I went along, but basically I roasted cauliflower in the oven tossed in oil, salt, pepper, turmeric, cumin, coriander and mustard seeds, then fried off an onion, added a tub of cherry tomatoes and a tin of chopped tomatoes, threw in some garam masala and white pepper and a big splash of red wine vinegar, then added in the cooked cauliflower and enough water to make it saucy. Served on rice with fresh coriander. I think it would work with whatever spices you have/like best!
