Doing great Sara! One simple meal is cauliflower rice stuffed peppers, shred your cauliflower into rice sized pieces and saute it, mix with your browned ground beef seasoned the way you like it lots of recipes online for it...yummy and filling and looks pretty on the plate https://cookinglsl.com/keto-stuffed-peppers-with-cauliflower-rice-recipe/
