Ok, one of the toughest parts of it all is leaving behind some foods you love.. However, doesn't have to be that way...
I've always liked chicken parm... but.. the carbs involved are a no go..
However, here a keto friendly parm recipe..

and not so much different...
Keep in mind I used a large 9.5 ounce chicken breast... but only eat half for dinner... and then the rest for breakfast... just like day old pizza..

Instead of breading the chicken with bread crumbs... I use 1/4th cup coconut flour, 1/4th cup almond flour, one heaping tablespoon of parmean cheese.. put in a container and shaken up...Then .. crack 2 eggs.. and soaks the chicken.. and then dredge in the flour mixture.. quick fry in 2 tbs of butter and one of olive oil..until the crust is browned...

Pre-heat the over to 380 - and bake the chicken for 20 minutes..

In the mean time, saute 2 ounces of mushrooms..and reserve.. then 3/4 cup of diced tomatoes, 1 tbs tomato paste, saute 2 cloves of garlic and add, bring to a soft boil and lower to simmer... I add a little stevia to sweeten the sauce..

When the buzzer goes off for the 20 minute chicken..pull it out and spread the tomato mixture on top... bake an additional 20 minutes...

When the buzzer goes off for the second time... spread cheese ( I use mozzerella.. over the top of it all.. and garnish with fresh basil... bake for 8 to 10 minutes more or until the cheese starts to brown... Enjoy... I serve it with boiled asparagus spears with ranch dressing...

(Keep in mind that most of the flours used... actually remain unused but you need to use the amounts to adequately dredge the chicken....the remainder is tossed.. so the carbs in them are next to nothing)

Impressive. Have to save that one for when I feel like spending more time with food prep. Got into a quick prep habit of late.

That looks really good. Looks like you have a good plan for still being able to eat the things you like without getting derailed. If this is something you eat fairly often you might consider making a big batch of sauce, portion it out into oversized silicone “ice cube trays” and freeze. Once frozen remove from molds, put in baggies and you are ready to go anytime you get a craving for it. I make my own pizza sauce and that is what I do. That way I can control the ingredients and built in portion control.

@Kenna Morton...yes ..I do that a lot too.. But this was a spur of the moment , one off.. just sounded good for dinner tonight..

@raveneyes76 the best part is it comes in at about 13 grams of carbs... but I only eat half.. because the chicken breast is huge... so nice meal , of something I like.. with 6 grams of carbs.. Roughly the ame as the crust on a piece of bread..

This looks amazing! I've just decided to start the keto diet myself, but I still need more research and meal options. I'll be using this for sure.

@ Craetions Keto can be difficult in the beginning..and many give up rather quickly when they realize they can't have their go to comfort foods anymore. but once you get past the bacon saturation stage and the more you research of both tactics and recipes that others have posted it becomes far easier to adjust and not really even miss former food habits.. The one thing I did notice besides the obvious weight loss...was how those things I used to eat now effect me.. I am at a stage where I can carb load and basically eat anything I want, in any amount , one day a week..but.. they no longer give the comfort they used to.. instead they make me feel sluggish, bloated and energy deficient .. Hence , it i now easier to avoid them... That said, it does now give me the latitude to indulge on social occasions without worrying about it.

senseiande: Exactly! Well said! I would also add that there is an INTENSE feeling of well being that evolves after becoming truly fat adapted. The time this stage takes is different for everyone but I think it was 6 months for me because I was doing a lot of experimenting with ingredients I eventually realized were holding me back like packaged low carb tortillas & other packaged low carb stuff. I absolutely love the way I feel on mainly Whole Foods style Keto. The steady, calm, focused energy it creates is priceless. No other WOE has created this feeling for me personally. I've heard a lot of other people also say it's the gratitude for the sense of well being that makes starchy, sugary foods unappealing because that groggy hangover lasts so much longer than the 5 bites of food. When I blow it and eat too many carbs all I can think of is how gross I feel and how I want to get back to that energetic clarity that running on ketones produces. 😊
