Wow, all that for only that amount of calories?😮
This is yet another example of how the “eating healthy must be bland” theory is way off, that looks so good and filling as well!

3 (or more) mushrooms, chopped
1 small tomato, diced
A handful of spinach or swiss chard
1 tsp creamed horseradish (optional)
1 egg (or 2 if you wish)
Saute the veggies for a few minutes, add the horseradish (if using) and stir.
Make a well for the egg and cover until the egg is cooked 😊
Serve with some fresh herbs
