Butternut soup is super easy and requires no potato or anything extra to thicken it. Cinnamon or mild curry powder to amp up the butternuttiness. I also add chopped grilled bacon and feta to give it substance. I also like roasted red pepper/ tomato soup. Blacken the pepper skins in the oven and peel them to add a good smokiness to a basic tomato soup. (Sorry. No exact recipes, I just wing the quantities)

Sorry. I also don't really know anything about low carb when it comes to veggies, so if these two veggies are high in carbs, im sorry.... To my brain, carbs are bread and pasta whereas my nephew counts every sliver of tomato that he has in his macros - I just don't have that kind of mental energy. I believe all veggies = good for you 😊
