The 2 biggest things I hear from non-dieters is that it costs more money to eat healthy, and it takes too much time to cook a meal.

I want to hear from my fellow dieters on these issues since a lot of us are eating healthy foods and taking the time to prepare our own meals.... what do you think? Do you have any tips for saving money or time?

For me personally, I buy meat in bulk when it's on sale and keep it in the freezer. I occasionally find veggies on sale, too.. particularily frozen veggies. Last week I got a pound of mushrooms for $2, half off the regular price. Buying vegetables that are in season helps too and a lot of things can be frozen to save on waste. When making dinners I often make extras for leftovers... big time saver there. Most nights I don't have to make dinner cuz I have plenty of leftovers! I also have a garden which helps to keep my fridge in stock.. plus fresh picked vegetables are just plain YUMMY!! Bonus- veggies that go bad get thrown in the compost pile--- nothing is wasted!!

With these things I find no huge difference in the amount of effort and money I put into my diet... except planning ahead and the quality of food I now eat :)

Sorry but people who claim that are just Lazy. Unhealthy can be cheap if all you eat are ready-meals. But even then the cheap ones are filled with <censored> to keep them fresh on the shelf for weeks!

Google for OAMC recipes (Once a Month Cooking). The theory is, you buy in bulk, put aside one day a month to prepare the major components of meals (all of which freeze or otherwise store well) and then when you want dinner all you have to do is reheat. Even if you don't go the whole hog making a couple of mains and sides (adjusted to fit your eating plan obviously) to have ready in your freezer and need minimal work when you need too is a good idea.

And as you said. Making double of a recipe for leftovers rarely doubles the effort in making the recipe in the first place. Leftovers are an excellent time-saver.

I have not really noticed a big difference in the amount of money in theseslast 9 weeks but I love not buying CHIPS,LITTLE Debbies, juices, and much more items that I was. I buy fresh/frozen veggies and meats for the whole family and hubby and one chils get melik and bread still. I recently bought a FoodSealer and plan on freezing lot's of stuff that will last alot longer!

Thank you for your input, ladies!! Riocaz-- I totally and completely agree, people seem to be justifying their laziness by giving these excuses but me being me I just give them lots of suggestions and tips for saving money and time and then they look at me like *I'm* the crazy one LOL. The OAMC sounds quite interesting, I'm going to look that up, thank you for sharing!!

Since our freezer is not big enough, I personally have found canning in-season vegetables, stocks from leftover bones, soups and other items that store well in my pressure cooker a great option in order to alleviate the space issues with my fridge. As an added bonus, when the power goes out, I don't have all that waste from the freezer not staying frozen. Nothing in our house gets wasted if we can avoid it, not even bones.

yankgal- I soooo want a foodsealer, that would come in handy. And I am SO GLAD I don't buy any of that junk anymore, especially knowing what kinds of things are in them!! Instead I spend my money on nutritious food that serves my body instead of damage it. High five!

Ooh yes Joey canning is great too!! That is something I am personally aiming for, the bigger my garden gets each year the more I dream about it! It would especially come in handy for those items that just can't be frozen.

Yup I want one too. But for one person on their own it's a little extravagant :) That said I have several friends with them, and pretty much all of them have said don't bother with the cheaper sealers, save a bit longer and go for the mid range ones. The seals cheaper sealers make are highly variable and the difference in cost is worth it just for that.
