I don’t know if it’s “normal” but I do, I have arthritis and after over doing it, even a bit, I gain as much as 5 lbs water weight

Really ? I did not know that - I am being serious - I did not know that. Is that because the body stores up the water while trying to "cushion the joints - or something? I did not know that was possible. Okay then.
