I've finally learned the secret to thickening gravies and stuff with low carb, in case anyone else has been trying to figure this out... xantham gum! It works best with an immersion blender and about a cup of hot liquid -- thickens up in just a few seconds, then pour the liquid back into what you are making. It only takes a VERY light sprinkle... the stuff is amazing! Bob's Red Mill sells it.

Don't pour the xantham gum powder straight into what you are making or you will have a mess! This is what I'd been doing and you get clumps of stuff with a slimy consistency. Yuck. But with the stick blender it works perfectly and only takes a few seconds.
