Enjoying my Seafood Quiche made with salmon, shrimp, cheese, tarragon in a pie shell made from thinly sliced potatoes. Also having a refreshing side salad. Considering a picnic and this is will be an easy take along. Hope everyone has a great weekend!

Thanks! It was a fun day and this dish covers all my bases. It's low fat, high protein, some fiber and not too much sugar. I was able to enjoy two portions, add five grams of fiber, up my protein and only four grams of fat. I'm glad I enjoy fish. It's often a great low fat and healthy alternative to meat. Hope you have a nice Sunday. There's a break in the heat so I will definitely be outdoors as much as possible today :) Hope you have a good one!
