A lot of fermented foods are an acquired taste, but WOW are they good once you acquire it! I'd totally dig into this. I'm trying to make a conscious effort these days to get at least 2 servings of probiotic foods each day

They definitely are writing. Just experimenting with this since I still have plenty of kimchi and maman left. Sauerkraut almost run out though. Probably will make a new batch today. I learned recently that they're loads with vitamin K2, C and so much more, also good to help clean up the arteries too.
