I outwitted my pizza demons tonight. Even though I had a great plan for the week that I put together yesterday, things were not falling into place this afternoon and evening. We needed something for dinner, but there were gecko cages to redecorate and a new smoker on a pallet in the garage waiting to be unwrapped--I was running out of time and calling the pizza place was sounding very good. I took one last defeated look into the refrigerator when it occurred to me...frittata! I quickly chopped up some veggies and the sausage left from DH's nice-to-have-you-back-sorry-you-have-to-turn-around-and-leave-on-another-business-trip breakfast. I will have to get more eggs before we dye them for Easter, but I consider that a small price to pay for a pizza crisis averted! :)

I took a tortilla and added hamburger, olives, a little onion, olives, pepperoni and cheese and made a pizza. then I could only eat 1/2 of it. that took care of pizza for me

Pizza is one of my trigger foods. Can't stop at one piece. So I do add all the pizza toppings on top of different "crusts". I have tried a variety such as cauliflower crust, egg with flax and sunflower seeds, and omelets. Can't quite match that yeasty taste that I love, but it works.

My daughter has a pet leopard gecko named Soybean. The little lizard has grown quite a bit since she first came to live with us and so we had to get her some bigger accommodations. :) (She almost escaped from her old cage and the last exercise I ever want to get is chasing a gecko around my house!)

My Mom had them crawling every where in her screened in porch in Florida. They are kinda cute little creatures.
