I made a really delicious dinner tonight. Tuscan Chicken. I’ve made this once before a long while ago but have never used my own greenhouse grown “sun dried” tomatoes. I put the sun dried in quotes because I dehydrated them. 😆They were stashed in the back of the fridge in a mason jar and forgotten about so I’m glad I got a chance to use them. This probably wasn’t super healthy with the cream and cheese but tons of spinach to make up for it.

Love every thing Tuscan. I have visited Tuscany many times and enjoy their food and cook those dishes. Your chicken looks fabulous 👍🌺

Thanks all! I was kind of surprised it came out so well when it was kind of spur of the moment, use up some stuff from the fridge kind of dinner. 😄

Bemused, I used this recipe loosely. I air fried my chicken instead of pan sear and made the sauce separately. Used a whole clamshell of spinach. https://downshiftology.com/recipes/creamy-tuscan-chicken/
