This is a follow-up of yesterday's entry. Thanks to the input of my great friends here, I've decided to do some deeper investigating.
I just entered a full day of what I typically ate in my food diary. I would have considered this a major food day, and it topped out at just over 1400 kcal for the day, including 2 rum and diet cokes. No wonder my metabolism is low! I've been basically undereating for a very long time, and my dear body just adapted to that.
So, I'm not overly concerned about getting enough calories now. And I'm ok with my calorie need being somewhere around 1400-1600 for maintenance, because as I have said, it has been several years since my capacity for food has shrunk, so it won't be a challenge to stay there. People must have thought I was a closet binge-er to maintain so much fat, when they saw me eat so little. If I went out to dinner, all I would have would be an appetizer, and rarely finish it before feeling too full. Invariably, whoever I was with would look at me in astonishment, and say, "Is that ALL you're having??"
My hope is that I can repair the insulin resistance through LCHF and fasting.
I also think that since I've had an almost constant 18:6 IF pattern in my adult life, I need to change it up some, and do longer fasts to reset my insulin levels.
But now I realize, at a gut level, that since this has been going on at least 30 years, it will take a long time to fix.

P.S. I deleted the sample food entry. It was, for anyone who's curious, coffee with half&half and stevia in the morning, a Wendy's Jr bacon cheese burger with small fries and small sweet tea for lunch, and 2 oz of angel hair pasta with 2 tbs of butter and 2 tbs of Parmesan cheese, and 2 rum and diet cokes for dinner.

So glad you clarified. I was downright confused as well when I saw that you are doing LCHF! LOL. I'm so glad you didn't take offense. I usually keep my opinions to myself when I don't agree, but I was truly worried about your well being. I wish you well. 😊

I was confused as well, knowing you were doing LCHF. As I read a second time, I realized you were talking about the way you used to eat. While it did not amount to that many calories, it certainly was carb heavy and exemplifies the problem of insulin resistance. While I understand IF gives the body a break from the flood of insulin, I don't think it's enough without additionally reducing the carb load. Well, at least I would say that is true in my case. Perhaps your unintentional natural practice of 18:6 kept you from becoming heavier though.

I did that "back in the day" entry at one point and was shocked by the carb count and the amount of calories I was consuming on a regular basis. It really does put things in perspective.

I admire your honesty. I don't think I'd ever post a back in the day entry. People would think i was competitive eating training.

LOL @Barb. I used to be able to pack away quite a few groceries. Maybe I should revisit the way-back machine and put in those days when I put away whole bags of Cheetos after breakfast at Waffle House, lunch at Taco Bell , and a nice, homemade linguine with clam sauce for dinner. UGH!

Lol! Taco Bell...Just a year ago i would eat two big box orders with two cokes and a power burrito. Then I'd either get a dozen Krispie kremes or a half gallon of ice cream for dessert. And then, of course go get what the kids wanted.

When I was eating two pints of Ben & Jerry's and a dozen donuts or muffins I was really ashamed and disgusted with myself. I was sure that nobody else did these things. One of the things I love about this community is that a lot of us have been there and now we're all trying to get healthy. It feels good to know you're not alone.

America is covered with fast food restaurants. The food is addictive and unhealthy. As a society we are in trouble. Here at FS, we are the few who are conquering the plague!

@Erika, people are waking up, and in droves. Books like Wheat Belly, Grain Brain, and the like are making people aware. I read an article a few days ago that the food industry is getting worried. People are beginning to 'vote with their wallets'. If we stop buying crap, they will stop making it. Or, they'll get sneakier about how they put it out there. More people are also growing some of their own food. Even if it's just a tomato plant in a pot on the patio, folks want to be connected.
