That looks so nice and green capsicums are my fav! I want to make these soon for dinner but been waiting for capsicums to come down in price. (i think they are now?)

Yes. It was 100% vegan. I did use the meatless protein textures. I really prefer not to use those as they're essentially processed foods, but I'm still cooking for the entire family so I have to keep some semblance of an omnivore diet or they won't eat it.

Sammy-I found green bell peppers for .78 a piece. So they are beginning to come down. I just started the pods for my garden so I'm hoping to have a ton of free produce soon.
