I diet to treat and prevent flare-ups of small intestinal bacterial overgrowth (SIBO) and a possible S candida yeast infection in the gut. When overgrowth occurs, the delicate epithelial lining of the intestines are stretched and strained, which can lead to conditions such as leaky gut, food sensitivities, loss of digestive enzyme function, and physical damage (e.g. diverticuli) in the gut.
At this moment, I'm on a ketogenic elimination diet. With eggs, animal meat, broth, and fat as the base of my diet, I'm introducing low FODMAP vegetables one at a time, and I'll move on to more fibrous and fermentable vegetables, fruit, and legumes next. I'm also adding probiotics in very slowly.
I believe in eating seasonally, and I do keto each winter. When spring arrives, I break away from low carb eating to enjoy fresh fruit. In the summer, I eat a lot less meat and more plant-based meals like salads. When fall rolls around, I'm ready for heartier fare, like chili and pumpkin bread. After the holidays, I'm ready to do another keto cleanse!
In general, I follow a modified anti-inflammatory paleo diet. I'm sensitive to nightshades (peppers, paprika, eggplant, tomato) and soy (emulsifiers and isolates particularly). I have a really hard time digesting starches, the stickier they are (like sweet potato or white rice) the worse.
