Well, independence day is upon us. Hope everyone has a wonderful day!! Mine started well, I walked the dog, put in wash and had a good breakfast. Last week I bought Keto Comfort Food Cookbook and tried the Croque Madame (ham, egg and cheese on a Keto waffle). The Cookbook had a very big puffy waffle, my waffle maker is ancient and makes thinner waffles. Her recipe made 8 for 1 carb, mine made 16! Needless to say, I had a lot of waffles left, so I made egg sandwiches during the week, this mornings was sausage, egg, cheese and spinach. The problem I'm having is I made some sweets for myself, Keto Blueberry cream cheese bars, Keto Toffee, etc. My sugars are at 130 all week, considerably higher then they have been, I wonder if I'm reacting to the Swerve I'm using? This week I am determined not to eat any of those sweets and see if my sugars go back down. Can a diabetic react to sugar substitutes? Well, we'll see what happens after my (not really scientific) tests.

I have read that some sugar substitutes can still get your body to have those sweet cravings, just as if we're eating sugar. I find I want to eat the sweet treats a lot more until they are gone, then I don't really crave them.

I have read that sugar subs can raise blood sugars. I really can't tell because my bs are so out of whack because of the medication prednisone. But my take on it that if the sugar sub has some carbs that it will raise bs, but not like a higher carb sweetener/sugar, I am sure you will figure it out over the next week for your body. 👍

I really don't have any major cravings for sweets, it's more like I see everyone around me having some and I don't want to be left out. As I said I've used Swerve to make my snacks - maybe I'll try another type of sugar if my experiment doesn't give me results. The recipe is 8 large eggs, 4 hard boiled eggs, 1/2 C parmesan, 1 tsp baking powder, 1/2 C ghee or coconut oil (I used ghee) and pinch of salt. Put everything accept the ghee/oil in a food processor or blender, then add the ghee/oil - recipe says it makes 8 large waffle, since my maker is for smaller waffles, I got 16. I used the others for sandwiches, so I didn't have to make cloud bread this weekend. You can make them "sweet" by omitting the parmesan and putting in 1/4 C Almond flour and sweetener to taste. Haven't tried that yet.

Oh and the book has a chicken and waffles recipe that's pretty amazing too. The savory waffles, chicken and a bit of sugar free syrup are great.

Yes a diabetic can react to substitutes. My bf is type 2 and their are a couple he has be careful of.

It's different for each person though, so you might theoretically react to splenda but be fine with stevia, and he could have the opposite problem :) hope I helped some.

Stevia has carbs in it so will effect your glycemic index and your front end blood sugars. Splenda has a fructose molecule in it which is just like berries. They do not impact the glycemic index up front in your digestive process, but can have a much larger impact after digesting on the 'insulin index' (see the obesity code). Some of the sugar alcohols have the same problem. Agave is pure fructose and you might as well just use the fruit and get the other nutrients. 🤷🏻‍♀️Dr. Berg on YouTube does a fairly good short explanation of this stuff.
